Veracruz Breakfast Biscuit

- 1 1/2 cups sautéed onions and green peppers
- 1 1/4 cups sweet Italian sausage, casings removed, chopped and cooked
- 1 cup black beans, canned, rinsed
- 1/4 cup Original TABASCO® brand Pepper Sauce
- 12 eggs, beaten
- 1 1/2 cups hash browns
- 1 cup Monterey Jack cheese, grated
- 12 biscuits

Combine and heat the sautéed onions, peppers, sausage, black beans, and the Original TABASCO® Sauce. Hold warm.
For each serving, ladle 2 ounces of the egg into a preheated nonstick omelette pan and cook omelette style until the egg sets.
Top the omelette with 1/2 ounce of hash browns, 1 1/2 ounces of the sausage mixture, and 1/2 ounce of the cheese. Fold the omelette in half, then into quarters and place on a biscuit.
