BEEF TENDERLOIN WITH SPICY MANGO RELISH AND A TABASCO®-SOUR CREAM SAUCE

Mangoes, seeded and diced 3 ea.
Tomatoes, diced and seeded 2 ea.
Green chiles, roasted and diced 3 ea.
Green onion, chopped 1 ea.
Lime juice juice of 1 lime
Rice vinegar 1 Tbsp.
Honey 1 Tbsp.
Salt to taste
TABASCO® brand Original Red Sauce, divided 3-1/2 oz.
Beef tenderloin, filets 12 4-oz.
Sour cream 36 oz.

Method

  1. In a large bowl, stir together diced mango, tomatoes, chiles, green onions, lime juice, rice vinegar, honey, salt and 1/2 oz. TABASCO® Sauce. Just before serving, toss relish quickly to incorporate all juices once more.
  2. Sear filet on each side to achieve a medium - rare doneness.
  3. Mix 3 oz. of TABASCO® Sauce into sour cream. Heat 24 oz. of sour cream.
  4. For each serving, place hot sour cream sauce in center of plate and coat the bottom. Next, add mango relish to center of plate and add beef to center of relish.
  5. Top with 1 oz. of cold TABASCO®-sour cream sauce and garnish with 1/2 Tbsp. mango relish. Serve hot.
