GARLIC FRIED CHICKEN WINGS WITH SOBA NOODLES

Wings

Eggs 10 ea.
Garlic powder 2 Tbsp.
Evaporated milk 10 oz.
Water 1/2 gal.
Chicken wings 10 lbs.
All-purpose flour, for dredging as needed

Wing Sauce

Ingredients Weight Measure
Soy sauce 1-1/2 cups
Distilled white vinegar 1 cup
Sugar 2 cups
Garlic, minced fresh 4 Tbsp.
TABASCO® brand Garlic Pepper Sauce 2 oz.

Soba Noodles

Ingredients Weight Measure
Soba noodles 1-1/2 lbs.
Soy sauce 3 Tbsp.
Olive oil 3 Tbsp.
Sesame seed oil 3 tsp.

Method

  1. To prepare Wings, combine all ingredients except flour and marinate chicken wings overnight.
  2. Drain wings from marinade, dredge in flour and fry at 350°F until done.
  3. To prepare Wing Sauce, combine all ingredients in a sauce pot on medium-high heat and reduce by 30%. Toss fried wings in sauce.
  4. To prepare Soba Noodles, cook noodles according to package directions; drain. Combine soba noodles with remaining ingredients and toss.
  5. Place wings over bed of soba noodles.

Yield:
