ROAST PORK TENDERLOINS WITH CRANBERRY-RASPBERRY-CHIPOTLE SAUCE

Demi-glace 2 cups
Ocean Spray® Cranberry-Raspberry Crushed Fruit 2 cups

Pork Tenderloins

Honey 1/2 cup
TABASCO® brand Chipotle Pepper Sauce 1 tsp.
Pork tenderloins, approx. 1" ea. 4 ea.
Black pepper, coarsely ground to cover

Method

  1. To prepare Sauce, mix all ingredients in small saucepan. Heat over low heat; reduce slightly. Sauce can be served as is, or strained of crushed fruit and seeds.
  2. To prepare Pork Tenderloins, mix honey and TABASCO® Chipotle Pepper Sauce in small bowl. Brush mixture over tenderloins. Roll pieces in ground pepper; shake off excess.
  3. Place in shallow pan, uncovered. Roast at 450°F for 30 minutes. Slice and serve with sauce.
