Ground chuck beef, fresh 4 lbs.
Red onions, fresh, chopped 1 lb.
Garlic, fresh, peeled, chopped 2 cloves
Croutons, seasoned, crushed or chopped to crumbs 12 oz.
Eggs, large, whole, fresh 2 ea.
Red and green bell peppers, seeded and chopped 1 ea.
TABASCO®brand Chipotle Pepper Sauce 4 oz.
Salt and pepper to taste

  1. Preheat oven to 350°F.
  2. For Meatloaf, mix together all ingredients lightly by hand in a large mixing bowl until all ingredients are well blended.
  3. Press meatloaf into a suitable-sized loaf pan, so that the meatloaf is at least 4" deep. Now turn meatloaf out onto a rimmed baking sheet. The loaf pan is only used to shape the meatloaf, not to bake it.
  4. Bake meatloaf in oven until an instant-read thermometer registers 145°F in meatloaf's center.
  5. For Glaze, mix together all ingredients and brush heavily onto top and sides of meatloaf.
  6. Return to oven and bake until 160°F internally.
  7. Let rest at least 10 minutes before slicing into 8-oz. servings.
  8. Serve with scalloped potatoes au gratin and fresh turnips and greens.
