Ingredients Weight Measure
French bread 1/2 loaf
Half-and-half 1 cup
Whole milk 1 cup
Nutmeg 1 tsp.
Eggs 5 ea.
TABASCO® brand Original Red Sauce 3 Tbsp.
Corn, creamed 2 cups
Sharp cheddar cheese, grated 2 cups
Onion, chopped 1/3 cup
Raisins, golden 1-1/2 cups
Tasso, chopped, smoked 1/2 lb.
Salt and pepper to taste


  1. Slice French bread; preheat oven to 350°F.
  2. Combine half-and-half, milk, nutmeg, eggs and TABASCO® Sauce, and whisk together until eggs are beaten.
  3. Stir in creamed corn, cheese, onions, raisins and tasso.
  4. Pour mixture over bread slices and press it down so the liquid soaks through the bread.
  5. Season with salt and pepper.
  6. Bake in a 3-qt. soufflé dish or an appropriate-size chafing dish at 350°F for 35-40 minutes or until a rich golden brown.

Yield: 12-20 servings
