CHIPOTLE BACON & CHEESE MEATLOAF

Meatloaf

Ingredients Weight Measure
Ground beef, (30% lean) 4 lbs.
Red onion, medium, grilled and sliced 1 ea.
Bacon, strips, cooked and rough chopped 20 ea.
Mild cheddar cheese, cut into 1/4 " cubes 2 lbs.
Eggs 8 ea.
Worcestershire sauce 6 Tbsp.
TABASCO® brand Chipotle Pepper Sauce 4 Tbsp.
Breadcrumbs 2 cups
Salt 2 Tbsp.
Black pepper 1 Tbsp.

Chipotle Ketchup

Ingredients Weight Measure
Ketchup (brand is your preference) 20 oz.
TABASCO® brand Chipotle Pepper Sauce 5 Tbsp.

Potatoes, 40 ct., sliced into 5 slices lengthwise and then cut in half 7 ea.
Texas toast 16 slices
Boston lettuce, outer leaves, for garnish 16 ea.
Red onions, cut into 1" rings, for garnish 2 ea.

Method

  1. Preheat oven to 375°F.
  2. For Meatloaf, in a large mixing bowl, add all meatloaf ingredients together and mix well with hands. Make sure all ingredients are well incorporated.
  3. On a greased sheet pan, mold meatloaf into 2 loaves (5" wide x 15" long x 2" high). Bake at 375°F for 10 minutes.
  4. For Chipotle Ketchup, mix ingredients.
  5. Remove meatloaf from oven and glaze with 1/3 of Chipotle Ketchup mix.
  6. Place back in oven and bake for another 10 minutes. Remove from oven again and glaze with 1/3 more of the Chipotle Ketchup mix.
  7. Turn oven up to 400°F. Return meatloaf to oven and bake 10 more minutes.
  8. Remove from oven and let rest for 5 minutes.
  9. Fry potatoes in deep fryer at 375°F until golden brown.
  10. Toast bread until golden.
  11. Slice meatloaf into 3 oz. portions and place 2 on each plate. Plate fries and Texas toast. Use remaining Chipotle Ketchup as dip for the fries.
  12. Garnish with lettuce and red onions and serve.
