Ingredients Weight Measure
Sugar 1 cup
Eggs 2 whole + 2 yolks
All-purpose flour 4 Tbsp.
Salt 1/2 tsp.
Milk 3-1/2 cups
Cream, heavy 2 cups
Vanilla extract 4 tsp.
TABASCO® brand Original Red Sauce 2-1/2 Tbsp.


  1. In a large mixing bowl, beat sugar into eggs until thickened and pale yellow.
  2. Beat in the flour and salt; mix well. Set aside.
  3. Bring milk to simmer in heavy saucepan.
  4. Slowly beat the hot milk into the eggs and sugar.
  5. Pour entire mixture back into pan and place on low heat.
  6. Stir constantly with wooden spoon until custard thickens slightly.
  7. Be careful not to let mixture boil or eggs will scramble.
  8. Remove form heat; pour custard through strainer into large clean bowl.
  9. Allow custard to cool slightly and then stir in cream, vanilla and TABASCO® Sauce.
  10. Stir and freeze in 2 batches.

Yield: 12-20 servings
