CHIPOTLE CREAM CHEESE AND SMOKED CHICKEN QUESADILLA

Ingredients Weight Measure
TABASCO® brand Chipotle Pepper Sauce 1 tsp.
Cream cheese, softened 1 oz.
Flour tortillas, 8" 2 ea.
Chicken meat, smoked, shredded 2 oz.
Red onions, finely diced 1/2 oz.
Cilantro leaves 1 Tbsp.
Mild salsa, prepared 2 oz.

Method

  1. Using a small mixing bowl, combine TABASCO® Chipotle Pepper Sauce and cream cheese and blend until smooth.
  2. Spread 1 Tbsp. of chipotle cream cheese mixture on 1 tortilla. Top with smoked chicken and red onions.
  3. Spread 1 Tbsp. chipotle cream cheese mixture on second tortilla. Place on top of first tortilla, with cream cheese side down sandwich style.
  4. Carefully place quesadilla on griddle or in large sauté pan over medium heat. Grill approximately 2-3 minutes then turn and grill other side until lightly browned and quesadilla is heated through.
  5. Cut into 6 wedges, garnish with cilantro leaves and serve with salsa.

Yield: 1 quesadilla
