PEAR AND APPLE CRÊPES WITH ZESTY CITRUS GLAZE

Filling

Ingredients Weight Measure
Apples, tart, cored, peeled, diced 3 ea.
Pears, cored, peeled, diced 2 ea.
Golden raisins 1/2 cup
Apple juice 1/4 cup
Cinnamon 1 tsp.
Sugar 3 Tbsp.
TABASCO® brand Green Jalapeño Pepper Sauce 3/4 tsp.

Glaze

Ingredients Weight Measure
Butter 4 Tbsp.
Sugar 6 Tbsp.
Orange juice, fresh 1/2 cup
Orange zest 2 tsp.
Lime zest 1/2 tsp.
TABASCO® brand Green Jalapeño Pepper Sauce 1 tsp.
Powdered sugar, for garnish 1/2 cup

Crêpes

Ingredients Weight Measure
Flour 3 cups
Eggs 3 ea.
Milk 3 cups
Salt 1/4 tsp.

Method

  1. For Filling, place all ingredients except TABASCO® Green Jalapeño Pepper Sauce in a saucepan and bring to a boil. Reduce heat, add TABASCO® Green Jalapeño Pepper Sauce, cover and simmer until raisins plump and fruit is very soft.
  2. For Glaze, in saucepan melt butter, add sugar and cook until sugar is dissolved but not brown. Add orange juice, zest and TABASCO® Green Jalapeño Pepper Sauce.
  3. For the crêpe batter, combine all ingredients and mix until smooth.
  4. In skillet, over medium heat, cook the crêpes until light brown on both sides.
  5. Fill crêpes with pear-apple mixture, and roll.
  6. Drizzle with zesty citrus glaze. Dust with powdered sugar.

Yield: 12-20 servings
