ROAST BEEF SANDWICHES WITH BLUE CHEESE DRESSING

Ingredients Weight Measure
Blue cheese, crumbled 4 oz.
Sour cream 2/3 cup
Mayonnaise 1/3 cup
Worcestershire sauce 1-1/2 tsp.
TABASCO® brand Original Red Sauce 1 tsp.
Salt and pepper as needed
Wheat bread, loaf 16 slices
Butter, soft 2 Tbsp.
Roast beef, rare, thinly sliced 1-1/2 lbs.
Arugula, trimmed 3 bunches
Peppers as needed

Method

  1. Using fork, mash cheese in bowl.
  2. Whisk in sour cream, mayonnaise, Worcestershire sauce and TABASCO® Sauce. Season with salt and pepper, as needed.
  3. Spread 8 bread slices with butter. Spread remaining 8 slices with cheese dressing; mound beef atop dressing.
  4. Sprinkle with salt and pepper. Top with peppers, if desired, then arugula and buttered bread slices. Cut sandwiches in half.
  5. Wrap in foil, to store refrigerated.

Yield: 8 servings
