CHORIZO CON QUESO

TABASCO®-Flavored Tortillas

Ingredients Weight Measure
All-purpose flour 2-1/2 cups
Vegetable shortening 1/2 cup
Salt 1 tsp.
TABASCO® brand Green Jalapeño Pepper Sauce 4 Tbsp.
Water, warm 1 cup
Cumin seeds 1-1/2 tsp.
Cilantro flakes, dried 1 Tbsp.

Filling

Ingredients Weight Measure
Jack cheese, shredded 4 oz.
Cotija cheese, crumbled 2 oz.
TABASCO® brand Chipotle Pepper Sauce 2 tsp.
Poblano peppers, roasted, 1/4" strips 1 oz.
Yellow peppers, roasted, 1/4" 1 oz.
Chorizo, prepared 2 oz.
TABASCO®-Flavored Tortillas (see recipe) 6 ea.

Method

  1. For the TABASCO®-Flavored Tortillas, combine flour, shortening and salt. Mix to the consistency of breadcrumbs.
  2. Add in TABASCO® Green Jalapeño Pepper Sauce, water, cumin seeds and cilantro flakes and shape into a ball.
  3. Knead 3 minutes and let rest for 30 minutes.
  4. Shape into 12 balls, place on plate, cover with plastic wrap and let rest an additional 30 minutes.
  5. On a flour-covered surface, roll each dough ball into a 6" flat round tortilla.
  6. Cook without oil on a griddle or in a sauté pan until tortillas puff.
  7. For Filling, in a microwaveable dish, combine cheeses and TABASCO® Chipotle Pepper Sauce and microwave for 2 minutes.
  8. Remove from microwave, mix ingredients, sprinkle roasted peppers around rim of plate and return to microwave for an additional 2 minutes.
  9. Remove from microwave. Make well in center of cheese, add chorizo into center, heat additional minute and serve immediately in TABASCO®-Flavored Tortillas (cheese cools quickly).
