Ingredients Weight Measure
Green tomatoes, 1/4" slices 2 lbs.
Yellow cornmeal 1/2 cup
Salt to taste
Bacon, sliced, cooked crisp, drained on paper towels, grease reserved 1 lb.
Firm white sandwich bread 8 slices
Mozzarella, fresh, cut into 1/4" slices 3/4 lb.
TABASCO® brand Original Red Sauce 1 tsp.
Bay leaves, washed 24 ea.


  1. In a small bowl, coat four tomatoes slices evenly with cornmeal and season with salt.
  2. In a heavy skillet, heat reserved bacon grease from cooked bacon over moderate heat until hot, but not smoking, and cook tomatoes until golden brown on both sides, about 5 minutes, transferring them as cooked to paper towels.
  3. Coat and cook remaining tomatoes in the same manner, using additional drippings if necessary.
  4. On a baking sheet, broil one side of bread slices about 3" from heat until golden brown. Coat mozzarella with TABASCO® Sauce.
  5. Assemble sandwiches by layering mozzarella cheese, basil, tomatoes, and bacon on 1 slice bread. Top with remaining bread slice.
