SPICY ALBONDIGAS SOUP

Ingredients Weight Measure
TABASCO® brand Original Red Sauce 1-1/2 Tbsp.
Ground beef 8 oz.
Egg, beaten 1 ea.
Breadcrumbs 6 Tbsp.
Onions, diced 1/4" 1 oz.
Salt 1/4 tsp.
Pepper 1/8 tsp.
Chicken broth 6 cups
Canned tomatoes, chopped 1 cup
Frozen Southwestern vegetable mix* 8 oz.

Method

  1. Combine Original TABASCO® Pepper Sauce, ground beef, egg, breadcrumbs, onions, salt and pepper. Mix well to distribute ingredients.
  2. Form into 1" meatballs, cover and hold refrigerated.
  3. Heat chicken broth and tomatoes and bring to a boil. Reduce heat and gently add meatballs to liquid. Simmer for 30-40 minutes until meatballs are cooked thoroughly.
  4. Add vegetable mix and cook and additional 5-8 minutes.
  5. *Note: Frozen vegetable mix should include such items as corn, beans, chiles, red bell peppers, and onions.

Yield: 4 portions
