SAVORY SHEPHERD'S PIE

Sautéed Savory Beef

Ingredients Weight Measure
Onions, medium, diced small 2 ea.
Celery, diced small 4 stalks
Carrots, diced small 2 ea.
Olive oil 2 Tbsp.
Garlic, minced 4 cloves
Ground beef 4 lbs.
Tomatoes, peeled, diced 10 oz.
Beef stock or broth 10 oz.
TABASCO® brand Original Red Sauce 1-1/2 tsp.
Cumin, ground 1/2 tsp.
Salt 1-1/2 tsp.
Black pepper, ground 1/2 tsp.

Jalapeño Garlic Mashed Potatoes

Ingredients Weight Measure
All-purpose potatoes, peeled and uniformly cut 4 lbs.
Garlic, peeled, chopped 6-8 cloves
Butter 6 oz.
TABASCO® brand Green Jalapeño Pepper Sauce 5 Tbsp.
Milk, warm 2 cups
Parsley, fresh, chopped 2 Tbsp.
Chives, fresh, chopped 2 Tbsp.
Salt 2 tsp.
Black pepper, ground 1 tsp.

Corn

Corn kernels, fresh or frozen 2 lbs.
Olive oil, for assembly as needed
Paprika, for garnish as needed

Method

  1. For the Sautéed Savory Beef, sauté the onions, celery and carrots in the olive oil until just tender but not browned. Add in the minced garlic and continue to cook another 2-3 minutes.
  2. Add in the ground beef and cook until browned, breaking up the chunks with a spoon as it cooks. When done, drain off the fat.
  3. Leave beef and vegetables in the pan and add in the canned tomatoes and broth, as well as the TABASCO® Original Red Sauce, cumin, salt and pepper. Simmer for 30 minutes.
  4. Check seasoning and consistency and reserve warm until assembly.
  5. For the Jalapeño Garlic Mashed Potatoes, in a pot boil potatoes in salted water until soft.
  6. Drain water and let potatoes steam uncovered. Can be placed into a warm oven on a sheet tray to really dry them.
  7. Add the chopped garlic to the butter in a saucepan and simmer both on top of the stove for 5 minutes.
  8. Mash the dried potatoes and then stir in the hot garlic and butter. Next whisk in the TABASCO® Green Jalapeño Pepper Sauce and then the warmed milk.
  9. Next, mix in the fresh herbs and continue whisking until the potatoes are light and fluffy. Season to taste with the salt and pepper and keep warm until assembly.
  10. For the Corn, if using the frozen kind, remove correct amount from freezer and thaw slightly. If using fresh, husk the corn and remove kernels from the cob using a knife.
  11. Cook the kernels slightly in boiling salted water and hold for assembly.
  12. To assemble, oil a square/rectangular baking or casserole dish with olive oil and then spread a shallow but even layer of the mashed potatoes in the bottom of the pan.
  13. Next, add in all of the Sautéed Savory Beef, packing it down evenly as you go. Top this with all of the corn kernels.
  14. The last layer will be the rest of the mashed potatoes, topped with a sprinkling of paprika.
  15. Place into a 375°F oven for approximately 30 minutes or until hot, brown and bubbly. This dish goes great with just a side salad and a roll for a complete and delicious meal.
