TUNA BURGERS WITH MANGO MOJO

Ingredients Weight Measure
Lime, zest and juice of 2 ea.
Onion, medium, finely chopped 1/2 ea.
Garlic, cloves, finely chopped 2 ea.
Vinegar, cider or rice 2 Tbsp.
Mango, chopped 1 ea.
Oil, olive 3 Tbsp.
TABASCO® brand Habanero Sauce 1/2 tsp.
Tuna, fresh, high quality 2 lbs.
Scallions, finely chopped 1 bunch
Egg, lightly beaten 1 ea.
Breadcrumbs 1/2 cup
Oil 2 Tbsp.
Buns, hamburger, sesame seeded 6 ea.

Method

  1. In a small saucepan, combine lime juice and zest, onion, garlic, vinegar, mango, olive oil and TABASCO® brand Habanero Sauce.
  2. Over medium heat, bring to a simmer and let cook for 10 minutes.
  3. Remove from heat, season witth salt and pepper and let cool.
  4. Cut tuna into 1/4" pieces and place in a medium bowl.
  5. Add scallions, egg, breadcrumbs, and season with salt and pepper, then stir together.
  6. Form 6 patties and brush with oil.
  7. Grill or broil for 2 - 4 minutes each side or until cooked to desired doneness. Serve on buns with mango mojo on top.
