GRILLED EGGPLANT AND VEGGIE BURGER WITH RED PEPPER MAYO

Ingredients Weight Measure
Eggplant, cut in 3/4" rounds 1 ea.
Zucchini, cut into 1/2" slices 2 ea.
Yellow squash, cut into 1/2" slices 1 ea.
Balsamic vinegar 3 Tbsp.
Oil 3 Tbsp.
Red peppers, roasted 2 ea.
Mayonnaise 1/4 cup
TABASCO® brand Garlic Pepper Sauce 1/2 tsp.
Sesame seed buns, sliced 6 ea.

Method

  1. Brush the eggplant, zucchini and squash with balsamic vinegar then the oil.
  2. Grill or broil the vegetables for 1 to 3 minutes each side or until just tender. Reserve.
  3. In a mini food processor or a blender, combine red peppers, mayonnaise and TABASCO® Garlic Pepper Sauce.
  4. Top each bun bottom with an eggplant round and some zucchini and squash slices. Finish with red pepper mayo and bun top.
