SALMON CLUB SANDWICH

Ingredients Weight Measure
Mayonnaise 6 Tbsp.
Basil, fresh, minced, divided 5 Tbsp.
Lemon peel, grated 1 tsp.
TABASCO® brand Original Red Sauce 2 tsp.
Olive oil 3 Tbsp.
Lemon juice, fresh 1 Tbsp.
Bacon, slices 8 ea.
Red onion, small, sliced 1 ea.
Salmon fillet, skinless 4 ea.
Sourdough bread, slices 8 ea.
Tomato, slices 8 ea.
Lettuce, leaves 8 ea.

Method

  1. Put mayonnaise, 2 Tbsp. basil, lemon peel, and TABASCO® Sauce in a small bowl and mix well.
  2. Mix remaining basil, olive oil and lemon juice in a large glass baking dish.
  3. Add salmon to oil mixture; turn to coat. Cover; chill 1 to 4 hours.
  4. Cook bacon in heavy large skillet over medium-high heat until crisp.
  5. Using tongs, transfer bacon to paper towels to drain.
  6. Add onions to drippings in skillet.
  7. Sauté until onions are tender and beginning to brown, about 5 minutes.
  8. Prepare grill, medium-high heat. Grill fish until just opaque in center, about 3 minutes per side.
  9. Grill bread just until golden, about 2 minutes per side.
  10. Spread mayonnaise mixture on 1 side of all bread slices.
  11. Top each of 4 bread slices with 2 bacon slices, 2 tomato slices, 1/4 onion, 1 salmon fillet and 2 lettuce leaves.
  12. Cover with remaining bread slices.
