PESCADO WITH COCONUT SALSA

Ingredients Weight Measure
Raisins 1/2 cup
Apple cider vinegar 1/4 cup
Brown sugar 1 Tbsp.
TABASCO® brand Original Red Sauce 1 Tbsp.
Water 3 Tbsp.
Vegetable oil 2 Tbsp.
Ginger, grated 2 tsp.
Coconut, grated 1/2 cup
Fish, firm, grilled 10 oz. 2 ea.

Method

  1. In a blender combine raisins, vinegar, sugar, TABASCO® Sauce, water, oil and ginger. Process until raisins are chopped.
  2. Mix in coconut, let sit 20 minutes and serve on grilled fish.

Yield: 2 servings
