Ingredients Weight Measure
Chicken breasts, boneless 6 ea.
Salt and pepper to taste
Olive oil 2 Tbsp.
Garlic cloves, finely chopped 3 ea.
Plum tomatoes, finely chopped 4 ea.
Eggplant, small, chopped 1 ea.
Nisçoise olives or black olives, pitted, chopped 1/2 cup
TABASCO® brand Original Red Sauce 1/2 tsp.


  1. Season the chicken breasts with salt and pepper.
  2. Heat a large skillet over medium-high heat; add the oil and then the chicken breasts. Cook for 8-10 minutes or until well browned; then turn.
  3. Add remaining ingredients, reduce heat and cover. Cook for 12-15 minutes or until chicken is cooked through.
  4. Serve with cous cous or rice.

Yield: 6 main course servings
