Ingredients Weight Measure
Chicken, whole, cut up 1 ea.
Salt and pepper to taste
Olive oil 2 Tbsp.
Onions, medium, chopped 2 ea.
Green bell pepper, seeded and chopped 1 ea.
Celery stalks, chopped 2 ea.
Plum tomatoes, chopped 6 ea.
Bay leaf 1 ea.
TABASCO® brand Habanero Sauce 1/2 tsp.


  1. Heat a large skillet over medium-high heat.
  2. Season the chicken with salt and pepper.
  3. Add oil to the pan, followed by the chicken.
  4. Brown the chicken evenly and then add the onions and cook another minute.
  5. Add the remaining ingredients and stir to combine. Cover and let simmer for 40 minutes or until chicken is tender. Remove the bay leaf.
  6. Serve with rice.

Yield: 6 main course servings
