Ingredients Weight Measure
Black pepper, ground 1/2 tsp.
Salt 1 tsp.
Cilantro, chopped 4 Tbsp.
Garlic, granulated 3 Tbsp.
Butter, softened 1 lb.
Corn muffin mix, dry 26 oz.
Eggs, large 3 ea.
Milk, whole 2-1/4 cups
Butter, clarified 6 Tbsp.
TABASCO® brand Green Jalapeño Pepper Sauce 2 Tbsp.


  1. Add black pepper, salt, cilantro and garlic to softened butter. Mix; reserve cool for service.
  2. In medium-size bowl, place remaining ingredients. Mix well.
  3. Grease hot griddle 325°F-350°F. Ladle 4-oz. portions onto griddle. Flip when top is full of bubbles.
  4. When cakes are done, serve with side of cilantro garlic butter.

Yield: 12 4-oz cakes
