MEDITERRANEAN VEGGIE BURGER

Ingredients Weight Measure
Oil 1 Tbsp.
Onion, medium, chopped 1 ea.
Carrots, medium, finely chopped 2 ea.
Mushrooms, chopped 1/2 lb.
Garlic, cloves, finely chopped 2 ea.
Cumin, ground 2 Tbsp.
Coriander, ground 2 Tbsp.
Ginger, ground 2 tsp.
Cinnamon, ground 2 tsp.
TABASCO® brand Original Red Sauce 2 Tbsp.
Salt and pepper to taste
Eggs 3 ea.
Lentils, cooked until tender 1 cup
Whole wheat breadcrumbs 1 cup
Hamburger buns 6 ea.
Mayonnaise to taste
Lettuce, leaves 6 ea.
Tomato, sliced 12 slices

Method

  1. Heat a medium skillet over medium-high heat. Add just enough oil to coat the bottom of the pan and add the onions and carrots.
  2. Cook onions and carrots until onions are translucent, then add mushrooms, garlic, spices, Original TABASCO® Pepper Sauce, salt and pepper.
  3. Stir to combine. Let cook about 5 minutes; then remove from heat.
  4. In a mixing bowl, combine vegetable mixture, eggs and breadcrumbs and mix well.
  5. Form into 6 patties and grill or broil for 6 minutes each side. Place on a bun bottom and top with mayonnaise, lettuce, tomato and top of bun.
