Ingredients Weight Measure
Pork sausage, ground 3/4 lb.
Beef, lean, ground 3/4 lb.
Vidalia onion, rough chopped 1-1/2 cups
Orange, yellow and red bell peppers, rough chopped 1-1/2 cups
Tomatoes, crushed 36 oz.
Water 1 cup
Garlic, roasted, minced 3 Tbsp.
TABASCO® brand Chipotle Pepper Sauce 2 Tbsp.
Oregano, fresh, chopped 2 Tbsp.
Salt and pepper to taste
Yukon Gold potatoes, large, thin sliced 10 large
Banana peppers, seeded and julienne 25 ea.
Colby and Monterey Jack cheese, shredded 12 oz.
Green onions, fine chopped 4 Tbsp.
Red bell pepper, fine chopped 4 Tbsp.
Sour cream, low-fat 1 cup
Basil, fine chopped 3 Tbsp.


  1. Brown first 4 ingredients.
  2. Add next 5 ingredients. Salt and pepper.
  3. Alternate layers of potato slices (salt each potato layer), banana peppers, meat sauce and cheese in extra-large or two 9"x12" baking dishes.
  4. Sprinkle fine-chopped green onions and red peppers on top.
  5. Cover and bake at 350°F for 50 minutes.
  6. Uncover and bake for an additional 10-15 minutes.
  7. Let cool 5 minutes. Cut and serve. Combine sour cream and basil. Top each with a drizzle of sour cream and basil mixture.
