Tuna Salad

Ingredients Weight Measure
Tuna, in water, drained 4 lbs.
Artichoke, bottoms, brunoise 1/2 cup
Red peppers, roasted, brunoise 1/2 cup
Green olives, pitted, finely chopped 1/2 cup
Celery, ribs, brunoise 1/2 cup
Bermuda onions, red, brunoise 1 ea.
TABASCO® brand Original Red Sauce 1/4 oz.
Mayonnaise, prepared 2 cups
Sour cream 2 cups
Lemon juice 2 Tbsp.
Old Bay® Seasoning 1-1/2 tsp.
Cheddar cheese, grated 2 oz.
Mozzarella cheese, grated 2 oz.
Cilantro, minced 1/4 cup
Dijon mustard 1 oz.
Salt to taste
Pepper to taste

Sourdough bread 30 slices
Mozzarella cheese, whole milk 30 slices
Tomato 30 slices
Butter, clarified, unsalted 2 cups


  1. Mix Tuna Salad ingredients together. Put in perforated pan; set in another pan and drain overnight in refrigerator.
  2. Heat griddle to 350°F.
  3. To assemble the Sandwiches, on each slice of sourdough put a slice of mozzarella and top with 4 oz. of Tuna Salad, two slices of tomato, another slice of mozzarella and another slice of bread.
  4. When all the sandwiches have been assembled, brush half the clarified butter on griddle, put down sandwiches and brush the tops with remaining butter.
  5. Griddle on both sides until golden brown and cheese is melted.
