Ingredients Weight Measure
Green and yellow squash, thin cut 2 lbs.
Olive oil, divided as needed
Salt and pepper as needed
Red onions, thinly sliced 2 lbs.
Balsamic vinegar 2 cups
Sugar 1/4 cup
Salmon, fillet 6 oz. 12 ea.
Mayonnaise, prepared 1 cup
Garlic, finely chopped 1/2 cup
Lemon, juice as needed
Focaccia rolls, toasted, split 12 ea.
TABASCO® brand Original Red Sauce as needed


  1. In a bowl, toss sliced squash with olive oil and season with salt and pepper. Grill on both sides until cooked through. Hold refrigerated until needed.
  2. In a bowl, toss sliced red onions and olive oil and season with salt and pepper. Grill until cooked through. Combine with balsamic vinegar and sugar and allow to cool. Refrigerate until needed.
  3. Season salmon fillets with salt and pepper and brush with olive oil. Roast in a 350°F oven until cooked through.
  4. Combine mayonnaise and garlic and adjust seasoning with lemon juice, salt and pepper.
  5. For each sandwich, coat top half of focaccia roll with prepared mayonnaise. On bottom half of roll, place 1 cooked fillet and top with 3-4 oz. cooked squash and 1-2 Tbsp. of balsamic red onions.
