SOUTHERN SWEET POTATO HASH

Ingredients Weight Measure
Butter 1/2 cup
Onions, sliced thin 2 cups
Ham, pulled or diced 1 lb.
Sweet potatoes, cooked, cubed 12 cups
TABASCO® brand Chipotle Pepper Sauce 2 Tbsp.
Salt and pepper to taste
Scallions, for garnish as needed

Method

  1. Melt butter over medium heat. Sauté onions until translucent.
  2. Add the ham and cook until the onion is soft and brown. Add the potatoes and TABASCO® Chipotle Pepper Sauce. Stir until heated through. Adjust seasoning with salt and pepper.
  3. Arrange on serving plate garnished with scallions and serve.

Yield: 12-20 servings
