Chicken, quartered 3 ea.
Yellow onions, large, sliced thin 4 ea.
TABASCO® brand Garlic Pepper Sauce 8 oz.
Soy sauce 2 oz.
All-purpose flour 4 cups
Shortening oil 1-1/2 cups
Kosher salt to taste


  1. In a nonreactive bowl, combine the chickens, onions, TABASCO® Garlic Pepper Sauce and soy sauce. Toss to coat evenly. Marinate for 30 minutes.
  2. Remove the chicken from the marinade and dust with flour. Reserve marinated onions.
  3. In a hot cast iron skillet/dutch oven, brown all of the chicken pieces thoroughly. Discard the excess fat from the pan.
  4. Layer the chicken in the pan with the marinated onions. Cover and place in a 350°F oven and roast for approximately 2 to 2-1/2 hours or until fork tender.
  5. Remove from pan and serve.
