PIQUANT APPLE ROASTED GARLIC MEATLOAVES WITH HOMEMADE APPLESAUCE GLAZE

Apple Glaze

Ingredients Weight Measure
White wine 2-1/2 cups
TABASCO® brand Garlic Pepper Sauce 1/4 cup
Brown sugar 1/4 cup
Apples, peeled and cored 3 ea.
Tomato paste 2 Tbsp.

Meatloaf

Onion, chopped 2-1/2 cups
Green onion, chopped 1 cup
Apple, cored, peeled, finely diced 1-1/2 cups
Breadcrumbs, plain 2-1/2 cups
Ground beef, chuck 5 lbs.
TABASCO® brand Garlic Pepper Sauce 2/3 cup
Celery, chopped 1 cup
Garlic, crushed 1 Tbsp.

Method

  1. For the apple glaze, combine the white wine, TABASCO® Garlic Pepper Sauce, sugar and apples in a small saucepan. Bring to a boil; then simmer for 5 minutes.
  2. Strain liquid from apples and reserve. Place apples in food processor and puree.
  3. Put apples back into the reserved liquid and stir in tomato paste. Simmer for 5 minutes and hold.
  4. For the meatloaf, combine all ingredients listed in a large bowl.
  5. Fold into well-formed loaves in hotel pans.
  6. Cover with applesauce glaze. Wrap in tinfoil and bake at 350°F for 55 minutes.
  7. Remove from pan and serve.
