SPICY MEATBALL TACOS

Meatballs and Tacos

Ground beef 1 lb.
Garlic, granulated 2 tsp.
Cilantro, chopped 2 tsp.
Salt 1-1/4 tsp.
Black pepper, ground 1/2 tsp.
Parmesan cheese 2 Tbsp.
TABASCO® brand Chipotle Pepper Sauce 1/4 cup
Eggs, large 1 ea.
Breadcrumbs, fine 1/3 cup
Taco shells, large (5"-6") 5 ea.
Lettuce, shredded 10 oz.
Mozzarella cheese, shredded 5 oz.

Chipotle Marinara Sauce

Marinara sauce 2 cups
TABASCO® brand Chipotle Pepper Sauce 1/4 cup

Method

  1. To prepare the Meatballs, in a medium bowl, place ground beef, garlic, cilantro, salt, pepper, Parmesan cheese, TABASCO® Chipotle Pepper Sauce, eggs and breadcrumbs. Mix well.
  2. Portion with #40 scoop to get 20 1-oz.-sized meatballs. Place on pan and roast in 375°F preheated oven for 20 minutes. Hold warm when done.
  3. To prepare Chipotle Marinara Sauce, in a small saucepan, heat marinara sauce and TABASCO® Chipotle Pepper Sauce. Allow to simmer 3-4 minutes and reserve warm.
  4. Heat taco shells in 400°F preheated oven for 3-4 minutes. Stuff each shell with 2 oz. lettuce. Top with 4 meatballs and ladle 2 oz. marinara sauce over top. Sprinkle with 1 oz. cheese and place in oven for 1 minute to melt the cheese.
