Sweet and Tangy Chipotle Pepper Sauce Marinade

Teriyaki sauce 6-1/2 oz.
TABASCO® brand Chipotle Pepper Sauce 6 Tbsp.
A.1. Sweet and Tangy Steak Sauce 6-1/2 oz.

Kabobs

Ingredients Weight Measure
Chicken breast, boneless, skinless 1 lb.
Skewers, 4" 20 ea.
Sweet and Tangy Chipotle Pepper Sauce Marinade (see recipe above) 1 qt.
Shrimp, peeled, deveined, 25-30 count 1 lb.
Brown sugar barbecue sauce 12 oz.
Green onion, sliced thin, for garnish 1/2 cup

Method

  1. To prepare the Sweet and Tangy Chipotle Pepper Sauce Marinade, combine all ingredients in a bowl and mix well. Pour over your choice of steaks, chops, chicken or spare ribs.
  2. Marinade times: steaks or ribs, 24 hours, chicken, 8-12 hours.
  3. To prepare the Kabobs, cut chicken into 1/2-oz. pieces. Skewer 3 pieces each on 10 skewers. Place in pan, top with 1 cup marinade and wrap. Marinate refrigerated 8-12 hours.
  4. Skewer 3 shrimp each on 10 skewers. Place in pan, top with 1 cup marinade and wrap. Refrigerate and allow to marinate 3-4 hours.
  5. Take remaining marinade and reduce by half on low heat. Add 12 oz. brown sugar BBQ sauce and allow to simmer 2-3 minutes on low heat. Reserve warm.
  6. On grill, cook both chicken and shrimp, using excess marinade while grilling to enhance flavor.
  7. When done, plate 2 skewers each of shrimp and chicken. Garnish with green onions and serve with side of BBQ sauce.
