Cheese Sauce

Milk, 2% 1 qt.
Heavy cream 1 qt.
Unsalted butter 1/4 lb.
All-purpose flour 1/4 lb.
Smoked Mozzarella cheese, shredded 1 cup
Cheddar cheese, shredded 1 cup
Mozzarella cheese, shredded 1 cup
Parmesan cheese, freshly shredded 1 cup
Andouille sausage, mild, fine dice 3 cups
Chicken base (no MSG) 1 Tbsp.
TABASCO® brand chipotle Pepper Sauce 1 Tbsp.
Kosher salt 1 Tbsp.
White pepper 1/2 tsp.

Breadcrumb Topping

Japanese breadcrumbs (Panko) 3 cups
Butter, melted 1/2 cup
TABASCO® brand Chipotle Pepper Sauce 1 Tbsp.
Kosher salt 1 Tbsp.
Paprika 1 tsp.

Macaroni, small (or shell pasta) 2 lbs.
Parsley, chopped, for garnish as needed
Parmesan cheese, shredded, for garnish as needed


  1. For Cheese Sauce, heat milk and cream until hot, 180°F.
  2. In a separate saucepan large enough to hold all the ingredients, melt the butter and then stir in the flour to make a roux.
  3. Gradually whip in the hot milk-cream mixture to the roux to make one consistent mixture. Heat till the mixture begins to thicken (almost a boil). Turn down to a simmer and cook for 7 minutes.
  4. Gradually add the cheeses a little bit at a time, stirring to make sure it is one smooth consistent sauce.
  5. Remove from heat and add sausage, chicken base, TABASCO® Chipotle Pepper Sauce, kosher salt and white pepper to season the sauce.
  6. For the Breadcrumb Topping, combine breadcrumbs, butter, TABASCO® Chipotle Pepper Sauce, salt and paprika. Mix until thoroughly combined.
  7. For the Pasta, bring water to a rolling boil, add salt and then the pasta and cook for 7-9 minutes or until al dente. Remove from heat, cool completely and strain.
  8. To assemble the dish, mix together pasta and cheese sauce until all the pasta is evenly coated. Place in a large dish for family style serving or in individual china bakeware (ramekins, rarebit, soup bowls).
  9. Next, top with an even amount of the breadcrumb mixture and bake at 375°F uncovered for 35-40 minutes for the large family-style serving dish, or 20-25 minutes for the individual serving dishes. Garnish with chopped parsley and shredded Parmesan cheese.
