Southwestern Marinade

TABASCO® brand Chipotle Pepper Sauce 2-1/2 oz.
Margarita mix 1 cup
Dry sherry wine 1/4 cup
Lime juice 2 Tbsp.
Garlic, granulated 1 Tbsp.
Ketchup 3/4 cup
Salt 1 tsp.

Chicken Bites

Chicken breasts, skinless, boneless 30 oz.
Flour 1-1/2 cups
Eggs, large 3 ea.
Cracker meal 1-1/2 cups

Leaf lettuce 10 ea.
Cheddar cheese, shredded 20 oz.
Doritos® Cool Ranch Flavored Tortilla Chips 10 oz.


  1. To prepare Southwestern Marinade, combine marinade ingredients; mix well.
  2. To prepare Chicken Bites, cut chicken into 1/2. oz pieces. Marinate in 10 oz. of Southwestern Marinade/BBQ Sauce for 2 hours.
  3. Take remaining marinade and reduce by half on low heat; reserve refrigerated.
  4. Drain chicken. Flour, then egg wash, drain and then bread with cracker meal; reserve refrigerated.
  5. Fry chicken at 360°F until golden brown.
  6. Garnish each plate with 2 lettuce leaves; then top with tortilla chips.
  7. Top tortilla chips with 2 oz. cheese and 12 pieces chicken. Squeeze 2 oz. of Southwestern BBQ Sauce over chicken.
  8. Top with 2 oz. cheese and melt. Serve with 2 oz. side of Southwestern BBQ Sauce.
