Ingredients Weight Measure
Olive oil 2 Tbsp.
Spanish onions, small dice 2 cups
Red peppers, small dice 1 cup
Garlic, minced 1 Tbsp.
Mushrooms, button, sliced 1-1/2 cups
Shiitake mushrooms, sliced 1 cup
Ground beef 5 lbs.
Eggs 3 ea.
Heavy cream 1/4 cup
TABASCO® brand Original Red Sauce 2 Tbsp.
A.1.® Steak Sauce 2 Tbsp.
Worcestershire sauce 1 tsp.
Salt and pepper to taste
Basil, chopped 1/2 tsp.
Thyme, chopped 1 tsp.
Breadcrumbs 6 cups


  1. In a large sauté pan, heat oil and sweat off onions, peppers, garlic and mushrooms. Place in a cooler and chill.
  2. When chilled, combine with remaining ingredients in a large bowl and mix well.
  3. On a sheet pan lined with parchment paper, form a loaf. Bake at 350°F for approximately 1 hour or until internal temperature of 150°F.
  4. When cooked, remove from oven and allow to sit 10 minutes before slicing.
