Black & Blue TABASCO® Ketchup

TABASCO® brand Original Red Sauce 20 dashes
Brandy 1 oz.
Blackberry glaze 4 oz.

Meatloaf

Ingredients Weight Measure
Ground ostrich 3 lbs.
Ground beef 1 lb.
Red pepper, roasted, small diced 6 oz.
Spanish onion, small diced 8 oz.
Eggs, whole 4 ea.
Quinoa 1 oz.
TABASCO® brand Garlic Pepper Sauce 10 dashes

Method

  1. To prepare the Black & Blue TABASCO® Ketchup, combine all ingredients in a food processor and blend until smooth. Reserve.
  2. To prepare the Meatloaf, combine meatloaf ingredients in a large mixing bowl. Blend until ingredients are evenly mixed.
  3. Shape meatloaf into a long roll.
  4. Coat meatloaf with 1/2 of the Black & Blue TABASCO® Ketchup. Reserve the remaining portion.
  5. Bake meatloaf at 350°F for approximately 30 minutes until internal temperature of 150°F is reached.
  6. Remove meatloaf from pan and slice.
  7. Upon plating, serve with 1-oz. of the reserved Black & Blue TABASCO® Ketchup per serving.
