PEPPERY CITRUS GLAZE

Ingredients Weight Measure
Pineapple juice 1-1/2 cups
Orange juice, fresh 1-1/2 cups
Lime juice, fresh 2 Tbsp.
Bay leaves 3 ea.
Ginger, ground 1/ tsp.
Soy sauce 1/4 cup
Balsamic vinegar 1 Tbsp.
TABASCO® brand Green JalapeƱo Pepper Sauce 2 Tbsp.
Kosher salt 1 Tbsp.
Black peppercorns, whole 1 Tbsp.
Honey 1 Tbsp.
Butter, unsalted 6 Tbsp.

Method

  1. Place all the ingredients except the butter in a small saucepot.
  2. Place over high heat and bring to a boil.
  3. Cube the butter into 1/2" cubes. Reserve.
  4. Continue to boil until the liquid becomes syrupy or nappe, approximately 15 minutes.
  5. Remove from heat and whisk in butter until fully melted and incorporated.
  6. Strain through a fine mesh strainer and leave at room temperature until ready to use.
