Mayonnaise 18 oz.
Eggs, separated, yolks and whites retained 6 ea.
TABASCO® brand Original Red Sauce 3 Tbsp.
Potatoes, peeled, diced into 1/2" cubes 3 lbs.
Red bell peppers, diced 1/2" 4 ea.
Red onions, diced 1/2" 3 ea.
Bread crumbs 2-1/4 lbs.
Buttermilk (or half and half) 12 oz.
TABASCO® brand Buffalo Style Hot Sauce 3 oz.
Paprika 2 oz.
Butter, whole, melted 12 oz.
Crabs, soft, fresh, cleaned 36 ea.
Vegetable or garnish of your choice


  1. Combine mayonnaise, egg yolks and 3 Tbsp. TABASCO® Sauce. Mix well and refrigerate.
  2. Blanch potatoes and cool.
  3. Sauté bell peppers and onions in a little butter and set aside warm.
  4. Combine egg whites and buttermilk. Coat potatoes evenly with egg mixture. Toss potatoes in bread crumbs creating breaded cubes. Deep-fry until golden brown. Set aside warm.
  5. Combine TABASCO® Buffalo Style Hot Sauce, paprika and 12 oz. melted butter, creating the buffalo sauce. Set aside warm.
  6. Top soft crabs with mayonnaise mixture on an oiled sheet tray and place in a 350°F oven for 8-12 minutes.
  7. Combine buffalo sauce, potatoes and pepper-onion mixture.
  8. Remove crabs from oven and serve with the potatoes O'Brian.
