Short Ribs

Short ribs (Prime, boneless) 12-15 lbs.
Garlic, finely chopped 2 Tbsp.
Sesame oil 1/4 cup
TABASCO® brand Original Red Sauce 1 Tbsp.
Seasoning salt 3 Tbsp.

Spiced BBQ Sauce

Shallots, minced 1/2 cup
Garlic, minced 1/2 tsp.
Peanut oil (or cottonseed oil) 1/4 cup
Rice vinegar 1/4 cup
Soy sauce 1/2 cup
Brown sugar 1 cup
Mustard, dry 1 tsp.
Paprika, ground 1 tsp.
Lemon, juice 2 Tbsp.
TABASCO® brand Original Red Sauce 2 Tbsp.
Catsup 2 cups
Chicken stock, saltless 2 cups
Salt To taste


  1. To prepare the Short Ribs, trim off any excess fat.
  2. Mix garlic, sesame oil and TABASCO® Sauce in a small bowl.
  3. Sprinkle salt over the ribs and rub into meat.
  4. Rub the garlic-oil mix on both sides of the meat. Marinate refrigerated for 4 hours.
  5. Wrap the ribs in aluminum foil and bake slowly at 325°F for 2 to 2-1/2 hours, or until fork tender. If using a convection oven, cook at 300°F.
  6. Keep warm for service.
  7. To prepare the Spiced BBQ Sauce, sauté shallots and garlic in oil until translucent and soft.
  8. Add all the remaining ingredients except the chicken stock and salt. Simmer for 10 minutes, adding the stock as needed to reach a sauce consistency.
  9. Strain the sauce. You may thicken it slightly by adding a touch of corn starch slurry. Salt to taste.
  10. To serve, slice the meat thin and fan around plate. Drizzle Spiced BBQ Sauce over meat, garnish and serve with side dish of choice.
