TABASCO® CHIPOTLE–PEPPER JACK CHEESECAKE WITH A FOCACCIA CRUST

Ingredients Weight Measure
Focaccia, 1/2" cubes, baked like croutons 8 slices
Butter, softened 1 oz.
TABASCO® brand Chipotle Pepper Sauce 2 oz.
Cream cheese, softened 1 lb.
Pepper Jack cheese, shredded 8 oz.
Eggs, beaten 3 ea.
All-purpose flour 1/4 cup
Salsa, mild 8 oz.
Sour cream 8 oz.
Green onions, sliced, 1/4" 3 oz.

Method

  1. Using a food processor, blend the focaccia croutons to breadcrumb consistency.
  2. In a small bowl, mix 1 cup crumbs with butter. Press this mixture into a well-greased 8" springform pan.
  3. Preheat the oven to 325°F.
  4. Using a large bowl, mix the TABASCO® Chipotle Pepper Sauce, the cheeses, eggs, flour, salsa, sour cream and green onions.
  5. Pour the mixture into a pan and bake for 1 hour or until a toothpick comes out dry when poked into the center of the cake.
  6. Serve hot or cold.
