TUSCAN CALAMARI WITH FIERY CHIPOTLE MARINARA SAUCE

Tuscan Calamari

Ingredients Weight Measure
Frozen, breaded calamari 2-1/2 lbs.
Lettuce, shredded 10 oz.
Ranch-flavored tortilla chips 15 oz.
Chipotle Marinara Sauce (recipe to follow) 36 oz.
Jalapeño cheese 15 oz.
Cilantro, for garnish as needed

Chipotle Marinara Sauce

Ingredients Weight Measure
Marinara sauce 1 qt.
TABASCO® brand Chipotle Pepper Sauce 1/2 cup

Method

  1. Fry calamari in 360°F oil until golden brown.
  2. Layer each plate with 2 oz. lettuce and top with 3 oz. ranch tortilla chips.
  3. Top chips with 8 oz. calamari. Drizzle with Chipotle Marinara Sauce after combining both sauce ingredients.
  4. Top with 3 oz. jalapeño cheese, melt, garnish with cilantro and serve with 4 oz. side of Chipotle Marinara Sauce.
