JUMP'N JACK FLASH GRILLED MEATLOAF SANDWICH

Meatloaf

Ingredients Weight Measure
Ground beef 1 lb.
Onion, minced 1/2 cup
Green bell pepper, minced 1/2 cup
Garlic, granulated 1-1/2 tsp.
Worcestershire sauce 1 Tbsp.
TABASCO® brand Original Red Sauce 2 Tbsp.
Breadcrumbs, fine 1/4 cup
Egg, extra large 1 ea.
Salt 1/2 tsp.
Black pepper, ground 1/4 tsp.

Sautéed Onions

Onions, sliced 2 cups
Olive oil 2 Tbsp.
TABASCO® brand Chipotle Pepper Sauce 1 Tbsp.

Chipotle Mayonnaise

Mayonnaise 1 cup
TABASCO® brand Chipotle Pepper Sauce 1 Tbsp.

Sandwich

Focaccia bread, 4"x4" 5 pieces
Smoked Gouda cheese, smoked, sliced 5 oz.

Method

  1. To prepare Meatloaf, in a bowl, mix ground beef, onions, peppers, garlic, Worcestershire sauce, TABASCO® Original Red Sauce, breadcrumbs, egg, salt and pepper. Mix well and place into a small Teflon loaf pan. Bake in a 350°F oven for 1 hour and 10 minutes. Reserve warm.
  2. To prepare Sautéed Onions, heat a small sauté pan, add oil and sauté onions until caramelized. Add TABASCO® Chipotle Pepper Sauce, mix well and reserve warm.
  3. To make Chipotle Mayonnaise, mix mayonnaise and TABASCO® Chipotle Pepper Sauce. Reserve refrigerated.
  4. Slice meatloaf into 4-oz. slices and grill both sides till golden brown.
  5. When ready to assemble sandwiches, cut focaccia bread in half like a burger bun and toast.
  6. To assemble sandwiches, spread 1 Tbsp. Chipotle Mayonnaise on bottom of focaccia bread, top with Meatloaf, then Sautéed Onions and then Gouda cheese. Spread 1 Tbsp. Chipotle Mayonnaise on top piece of focaccia bread and place over cheese to complete sandwich.
  7. Place sandwich in 400°F oven to melt cheese. When done, cut in half diagonally. Pin with toothpick and plate edgeways, cut facing up. Can be served with freshly fried potato chips.
