ROASTED TORTILLA CHILI DOGS

Chili

Ingredients Weight Measure
Lean ground beef 1 lb.
Onion, minced 1/3 cup
Green bell peppers, minced 1/3 cup
Garlic, granulated 1-1/2 Tbsp.
TABASCO® brand Chipotle Pepper Sauce 6 Tbsp.
Red wine vinegar 2 Tbsp.
Salt 1 tsp.
Canned tomato sauce 1 cup
Canned chicken broth 1 cup
Black pepper, ground 1/2 tsp.
Cumin, ground 2 tsp.

Hot Dogs and Tortillas

Hot dogs, 1/4 lb. 5 ea.
Flour tortillas, 6" 5 ea.
Onion, minced 10 Tbsp.
Cheddar cheese, shredded 5 oz.

Method

  1. For Chili, to a medium saucepan over medium heat, add ground beef and cook, stirring often. Add remaining ingredients and simmer on low heat 20-30 minutes stirring ocasionally. Reserve warm.
  2. For Hot Dogs, roast hot dogs on open grill.
  3. For Tortillas, as dogs are cooking, grill tortillas on griddle.
  4. Lay out tortillas and top with 2 Tbsp. chili. Spread to edges, keeping chili centered on tortilla. Place a hot dog on tortilla, top with onions and cheese and fold ends over each other. Close with a toothpick and place in 400°F oven to melt cheese.
  5. Serve with a side of fries.
