Yucatan Country Gravy

Milk 1/4 cup
Country sausage 1 lb.
Salt 1/2 tsp.
TABASCO® brand Original Red Sauce 3 Tbsp.
Whole milk 3 cups
Tomato salsa 2 cups
Green onions, thin sliced, for garnish 1/2 cup

Method

  1. To prepare the Yucatan Country Gravy, mix cornstarch and 1/4 cup milk, making sure there are no lumps in mixture. Set aside. Heat a medium saucepan over medium heat and add sausage meat. Stir with a wooden spoon until cooked. Add salt, TABASCO® Sauce and 3 cups whole milk. Bring to a boil, add cornstarch mixture, lower heat and whip well. Add tomato salsa and mix well. Simmer on low heat 4-6 minutes stirring as needed. Reserve hot.
  2. To prepare Biscuits, prepare biscuit dough according to manufacturer's directions. Place on a sheet of wax paper and roll out 1/2" thick. Cut 2" biscuits (this will yield 20 biscuits), place on greased pan and bake in 400°F oven 15-20 minutes.
  3. Cut biscuits in half. Place 4 halves on plate, top with 8 oz. Yucatan Country Gravy, garnish with green onions and serve.
