ROASTED CORN TOPPED WITH CHIPOTLE PEPPER SAUCE–LIME BUTTER

Corn on the cob 5 ea.
Lime juice 5 Tbsp.
Olive oil 2-1/2 Tbsp.
Salt to taste
Aluminum foil as needed

Chipotle Pepper Sauce–Lime Butter

Ingredients Weight Measure
Butter, salted 1/2 lb.
Lime juice 3 Tbsp.
TABASCO® brand Chipotle Pepper Sauce 4 Tbsp.
Salt 1/2 tsp.
Granulated garlic 2 tsp.

Method

  1. For Corn, peel husk away from half of the corn but leave husk attached. Season with lime juice, olive oil and salt.
  2. Fold husk back over corn and wrap loosely with foil. Place in 500°F oven and roast for 25 to 35 minutes.
  3. For Chipotle Pepper Sauce–Lime Butter, soften butter and add all ingredients. Mix well and reserve refrigerated for service.
  4. When roasted corn is done, open and remove foil. Peel back face layer of husk, place on a plate, spread 1 Tbsp. butter each over corn and serve with a side of Chipotle Pepper Sauce–Lime Butter.
