Frozen fries, waffle cut 3 lbs.
Salt and pepper to taste

Cheese Dip

Ingredients Weight Measure
Butter 6 Tbsp.
All-purpose flour, sifted 7 Tbsp.
Whole milk, hot 1 qt.
Cheddar cheese, shredded 1 cup
Swiss cheese, shredded 1 cup
Parmesan cheese, shredded 1/2 cup
Dijon mustard 1 Tbsp.
Chicken base 1 Tbsp.
TABASCO® brand Habanero Sauce 2 Tbsp.
Salt to taste

Method

  1. Fry fries in 350°F oil until crisp. Season and reserve warm.
  2. Heat butter in a saucepan. Add flour and whip together with the butter. Do not brown.
  3. Allow to cook 2-3 minutes and then add hot milk and whip well. Cook over medium to low heat until thickened, approximately 10 minutes. Stir frequently to prevent sauce from burning.
  4. Reduce heat to low and add remaining ingredients. The sauce will thicken, so be careful not to burn it. Simmer until all cheese is melted, about 10-12 minutes.
  5. Strain sauce into fondue pot and serve with seasoned waffle fries on the side.

Yield: 2 qts.
