MASHED POTATOES AND RED PEPPER SAUCE PARMESAN

Potatoes, large dice 2-1/2 lbs.
Butter 4 Tbsp.
Milk 1 cup
TABASCO® brand Original Red Sauce 3 Tbsp.
Salt 2 tsp.
Parmesan cheese 1/2 cup
Green onions, slicedq 1/2 cup
Roast garlic puree 1-1/3 Tbsp.
Olive oil 4 Tbsp.
Parmesan cheese 1/3 cup

Method

  1. In large pot, boil potatoes. Heat milk and butter together. When potatoes are done, drain well and whip for 2 to 3 minutes.
  2. Add heated butter and milk, TABASCO® Sauce, salt, 1/2 cup Parmesan cheese, green onions and roast garlic puree. Whip well.
  3. When done, grease large casserole dish with 2 Tbsp. olive oil. Pour potatoes in casserole dish. Spread evenly. Brush top of potatoes with 2 Tbsp. olive oil and sprinkle top with 1/3 cup Parmesan cheese.
  4. Place in preheated 375° F oven and bake for 25 to 30 minutes, until golden brown. Serve hot.
