VERA CRUZ SPIT-ROASTED PORK RIBS SPICED WITH CHIPOTLE PASTE RUB

Lime juice 1/4 cup
TABASCO® brand Chipotle Pepper Sauce 3 oz.
Salt 2 Tbsp.
Olive oil 2 Tbsp.
Cumin 2 tsp.
Ketchup 1/4 cup
Chili powder 2 Tbsp.
Garlic 2 Tbsp.
Sugar 2 Tbsp.
Orange juice 2 Tbsp.
Black pepper 1 tsp.
Corn flour 3 Tbsp.
Pork ribs, baby back 2-1/2 to 3 lbs. 3 ea.

Method

  1. In medium-size bowl, place all ingredients (except pork ribs) and mix well. Rub mixture on both sides of the pork ribs. Then wrap with plastic film wrap. Place on pan and refrigerate 24 to 36 hours.
  2. Remove wrap and roast ribs over open flame grill, turning every 10 to 15 minutes. Do not grill over high heat. Grilling will take about 1 hour. Base ribs with excess rub and water to keep moist while roasting. Serve with side dish of your choice.
