JALAPEÑO PEPPER SAUCE

Ingredients Weight Measure
Olive oil 1/4 cup
Onion 1/2 cup
Garlic, minced 2 Tbsp.
TABASCO® brand Garlic Pepper Sauce 4 oz.
Chicken broth 2 cups
Roasted tomato puree 1 cup
Salt to taste
Cumin 1 tsp.
Corn flour 1-1/3 Tbsp.

Method

  1. Heat oil in saucepan and add onion and garlic. Allow to sauté for 2 to 3 minutes.
  2. Add remaining ingredients except for corn flour. Allow to reduce by 1/3 the amount; then add corn flour slowly, whipping while adding flour.
  3. Lower heat and simmer for 2 minutes; strain well. Reserve warm for service.

Yield: 2 cups
