DON JOSE ROAST CHILI BEEF AND CHIPOTLE PEPPER SAUCE SOUP

Ingredients Weight Measure
Olive oil 3 Tbsp.
Beef, top round, raw, diced 1/2" 1 lb.
Garlic, roasted, minced 1-1/2 Tbsp.
Onion, diced 1/2 cup
Poblano pepper, roasted, diced 2 Tbsp.
Celery, diced 1/2 cup
Corn, cut, roasted 1/2 cup
Chorizo sausage, diced 3 Tbsp.
Roast green tomato puree 1/2 cup
TABASCO® brand Chipotle Pepper Sauce 3 Tbsp.
Chicken broth 1 qt. + 1 cup
Salt to taste
Cumin, ground 1-1/2 tsp.
Sweet potato, diced 2 cups
Dark kidney beans, cooked 1 cup
Green onion, sliced, for garnish as needed

Method

  1. Heat oil in a large saucepan. Add the ground beef and sauté until medium golden brown.
  2. Add garlic, onions, peppers, celery, corn and chorizo sausage. Sauté for 5-7 minutes; then add remaining ingredients except potatoes,beans and green onions. Stir well and allow to simmer for 20 minutes.
  3. Add the potatoes and beans, adjust seasoning and allow to simmer for 20-25 minutes on low heat, stirring occasionally until done. Garnish with sliced green onions and serve.

Yield: 2 quarts
