PORK CHOPS WITH MOLE SAUCE

Ingredients Weight Measure
Pork chops, 6-oz. loin 8 ea.
Olive oil 3 Tbsp.
Onion, 1/2" diced 1 cup
Green pepper, 1/2" diced 1 cup
TABASCO® brand Original Red Sauce 1 Tbsp.
Tomatoes, diced 14 oz.
Semi-sweet chocolate 1/2 oz.
Cumin 1/4 tsp.
Oregano 1 tsp.
Chili powder 1 tsp.
Cilantro, fresh, chopped 1/4 cup
Salt to taste

Method

  1. Heat oil in heavy saucepan, brown chops on both sides and remove.
  2. Add onions and green peppers and cook 2-3 minutes.
  3. Add remaining ingredients and simmer 10 minutes.
  4. Add chops back to sauce and simmer until thoroughly cooked.

Yield: 8 servings
